How to prepare:

Chop all the veggies, cheese, and eggs into a cube and a dollop of mustard at the center. Prepare the dressing by mixing sour cream, mayonnaise (preferably homemade), and the dried herbs. Add milk to the mixture to get the consistency you prefer. Drizzle the dressing on the salad and toss it around a few times. It’s nom-nom time.

  1. Zucchini Ribbons with Avocado Walnut Sauce

What you need:

  • 3 medium Zucchini
  • ½ large avocado
  • 1 cup fresh basil leaves
  • ¼ cup walnuts
  • 2 cloves garlic, peeled
  • ½ large lemon
  • ¼ cup Parmesan cheese, grated
  • ½ cup water
  • 1 tablespoon olive oil
  • 5-6 leaves fresh basil, to garnish
  • Salt and pepper to taste

How to prepare:

Cut zucchini into thin ribbons with a vegetable peeler. Sprinkle a little bit of salt with it and toss it around. Add avocado, basil leaves, walnuts, garlic, lemon, and cheese into a blender, and blend it until smooth. Add water to adjust the thickness. Now, in a skillet, saute the zucchini ribbons with olive oil until they become soft. Add the sauce to the zucchini and gently toss. Garnish with basil leaves and freshly grated cheese.

In the same skillet, add a little butter and scramble the eggs. Once the eggs are done. Put it in the bowl and toss it around to mix well. Garnish with dried herbs.

What you need:

  • 2 bell peppers, sliced
  • 2 cooked and shredded chicken breasts
  • 1 tablespoon coconut oil
  • 1 tablespoon soy sauce
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste

How to prepare:

Add coconut oil to a skillet on medium heat. Add the sliced bell pepper into the skillet and saute it until soft. Add the cooked chicken meat. Season it with soy sauce, chili powder, salt, and pepper. Mix it well and stir-fry for a few more minutes. Voila! One hot plate of chicken pepper fry is ready.
