5 cheese recipes to try out during lock down!

The one thing we would never think of growing up from is cheese! It is a delicate flavoursome that needs to be handled gently and it is exclusive for its ambient taste.

Cheese is renowned in many countries for the remarkable texture and taste it adds to cuisines. You could go on creating endless recipes such as salads, grills, pot cooking, starters, churros and you name it.

  1. Mac and cheese

There are umpteen ways to cook Mac and cheese recipes, hold it. However, this recipe beats the homemade recipes as it simple, quick and super delicious to cook and savour.

Directions

  • Cook macaroni according to the package directions. Drain.
  • In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux.
  • Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

You do have readymade pizza bases available in the convenient store packed and frozen, which is at your disposal post buying it.

  1. Potato cheese balls  

Serves as the most craving started to savour the watery mouths and hungry stomachs. This delicious crispy crust can gather the best of aroma and wait until you slit these crispy cheese balls.

Directions.

  • Mix potato, paneer, cheese, salt, coriander, cornflour, and garam masala in a bowl.
  • Take a small amount of the mixture and make it into a round. Flatten the round and keep a tsp of mozzarella cheese in the centre.
  • Bring the ends together and make into a ball again. Make all the balls in the same manner. Refrigerate the balls of 30 minutes.
  • In another bowl add all-purpose flour and add water to make a thin paste.
  • Dip the balls in the flour paste and then roll them in the bread crumbs.
  • Deep fry on medium heat until golden brown. Remove on a plate lined with a kitchen towel. Serve hot with coriander chutney or ketchup.

 

  1. Chilli cheese toast

The best options for your rainy day as you serve this with hot chocolate. This is kids favourite too. Don’t let the upcoming rainy days pass by without this hot-sweet serving.

Directions:  

  • Grate the cheese in a bowl (½ cup tightly packed grated cheese – mozzarella, cheddar or regular cheese). Add 1 chopped green chilli and ½ tsp grated or minced ginger. Also, add salt and black pepper as required (not in the pic) and mix well.
  • Slice 6-7 brown bread or whole wheat bread into triangular or rectangular slices. If you want you can remove the edges. Since this was homemade whole wheat bread and a very moist one, I have not sliced the edges.
  • Place the bread on a rack and bake or grill in a pre-heated oven at 200 degrees C for 5-6 minutes or more till lightly toasted. You can keep the bread in the centre rack or on the top rack.
  • The lightly toasted bread from the oven. No need to brown the edges. Just a little crispness on the surfaces.
  • Spread some butter evenly on the slices. Then spread the cheese-chilli-ginger mixture evenly.
  • Again, bake or grill in the preheated oven at 200 degrees C for 7-10 mins or more till the cheese melts and the bread slices get golden and crisp. You can also brown the cheese more if you want. Serve the chilli cheese toast with tomato sauce.

 

  1. Cheese pancakes with pineapple & Kiwi 

 

The lockdown has got us the everyday work blues and not even caffeine can flip us through the week. Here are the ultimate home-made heavenly cheese delights to pass through the week.

Directions:

  • In a large bowl, combine flour, sugar, salt and baking powder. Whisk well with a dry whisk and set aside
  • In another bowl mix lemon zest, milk, butter, vanilla essence and cottage cheese. Then separate the egg yolks and white.
  • Add the egg yolks to the milk and butter mixture and whisk
  • Whisk the egg white to soft peaks in a separate bowl – set aside
  • Now add the egg yolk + butter + milk + vanilla + cottage cheese + lemon zest mixture to the dry ingredients
  • Combine with a wooden spoon (do not overwork the batter, it’s ok if there are a few lumps)
  • Now divide the egg white mixture into 3 and slowly fold into the flour mixture
  • Once all the egg white has been mixed your batter is ready
  • Heat a non-stick pan
  • Use a large ice cream scoop so that you have equal quantities of batter for every pancake
  • Pour the batter onto the hot pan. Once you see bubbles form on the ends of the pancake flip and cook for 3- 4 mins on low
  • Stack and serve with grilled pineapples, kiwi and honey!
