Everyone loves yogurt! Yogurt is a great substitute for heavy sour cream and fatty store-bought mayo sauces, especially in these scorching summer months, when the sun is out with vengeance and the mercury is rising. Let’s not forget that yogurt has its health benefits too. Here are our favorite figure-friendly yogurt recipes that you can serve as side dishes or as stand-alone snacks for that tasty mid-morning or mid-evening treat.
Potato salad with yogurt and mustard dressing
1 large cooked and cubed potato, 1 chopped red onion, 1/2 cucumber cut into small cubes, 1/2 chopped bell pepper, 10 olives (halved), 2 chopped hard-boiled eggs, 2 tablespoons chopped parsley, 2 tablespoons chopped mint, 1 cup thick Greek yogurt, 1 tablespoon mustard, 1 tablespoon roughly chopped capers, pepper, 1 large garlic clove, wedges of 2 tomatoes.
Method: Mix all the above ingredients and your fresh potato and curd salad are ready.
Grilled chicken skewers with a tangy side sauce:
1 cup low-fat yogurt, a couple of garlic cloves, juice of one lemon, chicken breasts cut into large square chunks, one cup finely diced tomatoes, cucumber, onion, 1 tablespoon olive oil, 2 tablespoons fresh mozzarella.
For the marinade, mix together chicken breasts along with yogurt and garlic and set it aside for an hour or so. For the tangy side, sauce mixes together all the above ingredients and serve it with your favorite drink to beat the summer heat.
Honey-coated apples with spiced yogurt dip:
A few apples cut into long fine slices, 3 tablespoons of pure honey, 2 tablespoons unsalted low-fat butter, 1 cup of nonfat yogurt, powdered ground cinnamon and ground cloves.
Preheat oven to 400 degrees. Layer all the apples in a baking dish and add 2 tablespoons of honey along with melted butter and toss them well. Roast the apples until they are crisp-tender. In a separate bowl, mix yogurt, spices and 1 tablespoon of pure honey. Pour this yogurt mixture over your apples and your apple yogurt dish is ready.
Crushed cauliflower and yogurt:
1 head of cauliflower, 1 cup of non-fat yogurt, 1 tablespoon of low-fat cheese, 2 garlic cloves, 2 small shallots and pepper and salt according to taste.
Add garlic, pepper, and water to a pan and bring to a boil. Now add cauliflowers to the boiling water. When boiled, remove the cauliflower mixture from the fire and drain the water. In a mixer, add cauliflower, Greek yogurt, garlic, and shallots until a creamy consistency is formed. Add salt and pepper to the mixture and you are good to go!
Greek yogurt French toast:
2 slices of apple cinnamon bread, 1 egg, cooking spray, 1 cup of Greek Yogurt, cinnamon, 1/2 banana, 2 tbsp of sugar-free maple syrup.
Heat the pan and sprinkle a bit of cooking spray in it. Scramble eggs so that you can dip bread into it. Now, coat the batter on both sides and cook until each side is golden brown. In a separate bowl mix yogurt, cinnamon and banana slices together. Place this mixture on your bread. Bon Appetit!
